The brewery is in a renovated 1940s era Quonset Hut at the western end of the farm. It consists of a 3 BBL brew system, a 20 BBL brew system, outdoor fermenters, a koelschip, and a canning line..
3BBL & 20 BBL NYS MADE BREWING SYSTEMS
Fronhofer 3BBL Pilot Brewhouse Allows for small batch runs of farm-sourced specialty brews. Fronhofer 20BBL Brewhouse is our newest addition to ILFC&B, complete with two 60 BBL fermenters, will allow us to do large batch runs of our NYS beers right here on the farm.
The Koelschip is a former creamery tank repurposed for wild inoculation of beers. After boiling, wort is cooled outside in our open fermenter where it gathers wild yeasts that are floating in the air of the orchard. The wild yeast comes off our apple trees upwind of the brewery. The wort is then transferred into wine barrels where it is blended with 7- & 13-month-old sour ale for a long fermentation. Each beer in the Koelschip series is a unique blend.
