Pork Ribs
half rack of rib sections slathered in a beef BBQ glaze, served with roasted bacon balsamic Brussel sprouts, cherry pepper pasta salad & beet pickled egg slices

Chef’s Details: ribs from Highland Hollow Farms are rubbed in a rosemary-ginger seasoning, smoked for four hours & immediately wrapped in foil to allow the meat juices to saturate the outside of the ribs. Smothered in a homemade beef stock & BBQ glaze. Served with Black Horse Farms Brussel sprouts, North Country bacon & cherry pepper pasta salad featuring spiced vinegar, bell peppers, cherry tomatoes, scallions, and cucumbers
